Proper Food Portions Make for Healthy Residents (Multiple States) 

It was reported to Crandall Corporate Dietitians that there were two to three surveys that both state and federal surveyors observed that a few of the portion sizes served were less than the portion sizes specified on the posted spreadsheets. It is critical to adhere to the portion sizes specified on a menu to ensure the meals served by a community met the U.S. Dietary Guidelines and Dietary Reference Intakes (DRIs), in order to provide meals that include safe and adequate intake of essential nutrients. Not serving the proper portion sizes could possibly result in not providing the important nutrients and calories indicated on the menu’s nutritional analysis report and could result in weight loss along with other nutritional deficiencies.

Possible responses to not providing proper portion sizes could be to provide in-services on Portion Control, Meal Service Accuracy and Basic Nutrition.
 

A weekly Meal Inspection/Test Tray should be implemented to monitor for compliance to portion control.
